Paul Lisai grew up on an orchard in Grafton then traveled and worked on a variety of farms before deciding he wanted to start his own grass-based dairy. While farming on leased land, Paul enrolled in VHCB’s Farm & Forest Viability Program and developed a business plan. He also signed up with the Vermont Land Trust’s Farmland Access Program to secure farmland of his own. He found a property in Albany, near where he had been renting farmland since 2011. VLT conserved the farmland with funding from VHCB and NRCS, making the property affordable for the young farmer.
Paul milks a herd of Randall Linebacks, a heritage breed, and distributes his milk and cheese throughout the Northeast Kingdom, central Vermont and the Burlington area. He can be found at the Burlington, Montpelier, and Stowe farmers’ markets where he sells 10 varieties of cheese, and cream-top milk. Keeping his business diverse, Paul also sells milk to AgriMark every other day.
